Hi everyone. Julie from White Lights on Wednesday back again, and this month I’m bringing you all an easy to make lunch (or party) recipe idea. Recently we had mo son’s 3rd birthday. I pretty cook everything from scratch when we have birthday parties at our house, but with the temperature warming up in Arizona I didn’t want to have the oven running just before the party started.

I was trying to think of a dish everyone in the family likes and that I could make ahead of time. Salad was any easy option, but wasn’t exactly little kid friendly. But if I wrapped everything up in a convenient little bite it could be a winner. So that’s just what I did. All the caesar salad flavor we love in an easy to take bite for everyone at the party. I was done a hour before the party with all the dips and snacks. It was weird to not be at the stove at the last minute, but such a relief too!

Chicken Caesar Salad Wrap Ups

Prep Time: 5 minutes Total Time: 45 minutes

Ingredients:

1 large chicken breast, cooked and shredded

1 romaine heart, cleaned and thin sliced

5 slices bacon, cooked crispy and crumbled

1/4 cup fresh grated parmesan cheese

1/2 cup caesar style croutons

3/4 cup of your favorite caesar dressing, divided {I like Kraft}

10 medium sized flour tortillas

 

Directions:

  1. In a large bowl, stir together chicken, bacon, parmesan cheese, croutons, and 1/2 cup caesar dressing until well combined. If mixture tastes too dry, add a little more dressing as needed until desired consistency is reached. You don’t want everything to fall apart, the ingredients should hold together a bit.
  2. Heat tortillas in a large skillet over medium heat for 1 to 2 minutes per side. This makes them more pliable and keeps the wraps from breaking.
  3. Place about 1/4 to 1/3 cup chicken mixture on the bottom half of a tortilla. Top chicken with a small handful of romaine, and drizzle with about 1 tablespoon caesar dressing.
  4. Wrap the bottom end of the tortilla over the filling, and tuck the tortilla back under the filling to make it snug. Fold the sides of the tortilla in to keep the filling from falling out the sides, and then wrap towards the top of the tortilla until you have a burrito.
  5. Using a very sharp knife, cut the burrito in half at an angle (for presentation points) and place both halves on a serving platter. Repeat with remaining ingredients. Store in the fridge for 30 minutes before serving to let all the flavors marry together. You can serve them right away if you want to, it won’t hurt anything.
