It seems as though parts of our country are just now coming up for air after suffering through a long harsh winter. While we enjoy a hot latte on a cold winter day, we also tend to start wishing for the season’s change. We’ve spent some time the last few months dreaming about sitting outside sipping on a cold and refreshing beverage while soaking in a little sunshine. Our personal cocktail of choice is the mojito. Because you can create so many different variations, they make the perfect summer refreshment. If you are looking for a little extra flavor, they also are great with any kind of fruit.


  • 6 fresh mint leaves
  • 1 lime
  • 1 cucumber
  • 1 teaspoon sugar
  • 1-2 shots light rum
  • 1 can club soda


Muddle the mint leaves and one teaspoon of sugar in the bottom of a glass. If you like your drinks on the sweeter side add up to one tablespoon of sugar.? Cut the lime in half and squeeze out all the juices from both halves. Cut 3 slices of cucumber and add them to your glass. You can also use a slice of cucumber for garnish. Fill the glass with ice. Add 1-2 shots of light rum and top off the drink with club soda. You can also substitute the cucumber for any fruit. Soaking the fruit in the club soda for an hour adds a little more flavor. Exclude the rum for a light and refreshing mocktail!
